How to Make Rabri(Rabdi) Step by Step Recipe

Ingredients for Rabdi Recipe

  • Full cream milk – 500 ml
  • Green cardamom powder – 1/2 teaspoon
  • Sugar – 3 tbsp
  • Saffron strand – 6

For Toppings

  • Sliced almonds (blanched) – 2 tbsp
  • Pistachios (sliced) – 2 tbsp




  • Boil full cream milk in a thick-bottomed pan or a kadhai on low to medium flame until the milk starts to froth or forms a layer of cream/malai on top and it reduces to half in its quantity
  • Once the cream starts floating on top of milk, gently move the cream layer towards the end of the vessel using a spatula
  • Keep on simmering the milk on low heat and continue to collect the cream layer on the sides
  • The process of collecting the cream layer from milk has to be done many times. Continuous simmering of the milk will bring the cream on top and has to be brought to the sides. Also, stir the milk in between to avoid burn
  • Once the milk reduces to half, add the sugar and mix well
  • Stir continuously, you will notice that the cream layer will be collected on the sides
  • Scrape off the entire cream layer as well as dried milk solids and mix it with the thickened milk in the center
  • Add the sliced almonds and sliced pistachios and a few saffron strands on top of the thickened milk
  • Rabdi is ready to serve, transfer it to a serving bowl, and enjoy it warm or chilled as per your preference!
