Ingredients for Zucchini Rice Kebabs Recipe

  • Green beans – 1/2 Tbsp (diced)
  • Thai sweet chilli sauce – 1 Tbsp
  • Thai red curry paste – 2 Tbsp
  • Kaffir lime leaves – 3 (shredded)
  • Potato – 1 cup (boiled and mashed)
  • Blanched pickle relish – 1 Tbsp
  • Brown bread – 1/2 cup (crumbled)
  • Corn flour – 2 Tbsp
  • Coriander leaves – 1 tablespoon (finely chopped)
  • Refined oil – 2 Tbsp
  • Chives – 3 (chopped)
  • Zucchini – 1 cup (grated)
  • Rice – 1 cup (steamed and mashed)
  • Black pepper – 2 pinches
  • Salt – 2 pinches

Method

  • Take a mixing bowl add brown bread and put all the ingredients in it, knead all together into a firm and make a smooth dough
  • Take small portions of the dough, mould it and shape the mixture into small kebabs
  • Spray oil on a grilling pan and grill the kebabs for about 4-5 minutes or grill until both sides become golden brown
  • Once done remove and arrange them on a snack platter, garnish with spring onions and chopped coriander leaves
  • Tasty zucchini rice kebab is ready to be served, serve hot with pickle relish and Thai sweet chilly sauce
