Ingredients for Making Vada Pav Recipe

  • Pav – 8 pieces
  • Refined oil – 1 1/2 cup
  • Baking soda – 1 pinch
  • Water – 1/3 cup
  • Potato – 2 (Parboiled, mashed)
  • Gram flour (besan) – 3/4 cup
  • Green chili – 2 small (chopped)
  • Mustard seeds – 1 Tsp
  • Curry leaves – 1 spring
  • Garlic – 3 cloves (grated)
  • Asafoetida – 1 pinch
  • Turmeric powder – 1/2 teaspoon
  • Salt to taste

Method

  • Heat 1 tbsp of oil in a non-stick pan, add mustard seeds and let it crackle
  • Add the asafoetida and curry leaves and saute them for a minute
  • Add the garlic and green chilies and fry it for few seconds.
  • Add the potatoes, turmeric powder and salt and stir well. Keep aside to cool.
  • Meanwhile, make the batter by adding gram flour, turmeric, baking soda and little water (almost 1/3 cup).
  • Make tikkis with potato mixture
  • Heat oil in a deep frying pan and dip each tikki in the batter and then slowly slide it into the hot oil.
  • Deep fry all 8 tikkis in hot oil until they become golden brown.
  • Drain it on absorbent paper and keep it aside.
  • Slice each pav into half and place the vada in each pav and serve hot with green chutney.
