Thai Chicken Rice Recipe

Ingredients for Thai Chicken Rice Recipe

  • Boneless Chicken – 400 grams (cut into 1cm pieces)
  • Basmati Rice – 1½ cups (soaked)
  • Coconut milk – 1 cup
  • Oil – 2 Tbsp
  • Shallots – 4 Tbsp (chopped)
  • Ginger – 1 Tsp (chopped)
  • Garlic chopped – 1 teaspoon (chopped)
  • Curry powder – 2 Tbsp
  • Thai red curry paste – 1 Tbsp
  • Fresh red chillies – 2 (Diagonally sliced)
  • Lemon juice – 1 Tbsp
  • Salt to taste

Method

  • Heat oil in a rice cooker on medium flame and add shallots, ginger and garlic and sauté it for a minute
  • Add Thai red curry paste and chicken and mix well
  • Now add the curry powder, salt and 2 cups of water and stir well
  • Add the basmati rice and mix well
  • Add coconut milk and mix well again
  • Add red chillies and lemon juice, mix well
  • Cover the rice cooker and cook until done
  • Serve it on a serving plate and serve hot
