Spicy Saoji Chicken Curry (Nagpur Chicken) Recipe

Saoji chicken is a most famous and traditional Maharashtrian recipe. This dish is popular for its spiciness and hot taste. Do try this flavourful curry at home hope you will like it. The dish is also called Saoji Waradi most famous for its spicy taste.

Ingredients for Spicy Saoji Chicken Curry (Nagpur Chicken) Recipe

  • Chicken – 1 kg
  • Jawar flour – 2 Tbsp
  • Coconut powder – 2 Tbsp
  • Red chillies – 5
  • Shahi jeera – 1/2 Tsp
  • Poppy seeds – 1 Tbsp
  • Fennel seeds – 1 Tbsp
  • Coriander seeds – 1 Tbsp
  • Stone flower – 1
  • Black cardamom – 2
  • Cinnamon – 2 (small sticks)
  • Cardamom – 8
  • Cloves – 1 Tsp
  • Mace – 1
  • Peppercorns – 1 Tsp
  • Star anise – 1
  • Ginger garlic paste – 1 Tbsp
  • Turmeric powder – 1/2 Tsp
  • Coconut oil – 3 Tbsp
  • Onion – 1(finely chopped)
  • Cumin seeds – 1 Tsp
  • Salt to taste
  • Coriander leaves – 1 Tbsp (chopped)
  • Water as required

Method

  • Heat a Kadai, add cloves, cinnamon, cardamom, peppercorn, stone flower, black cardamom, mace, star anise and sauté them on a low flame for few seconds
  • Then add coriander seeds, fennel seeds, poppy seeds, shahi jeera, dry red chillies, mix well and fry till nice flavour comes out
  • In the same Kadai, add coconut powder, jawar flour and roast it for a minute, allow it to cool down transfer it in a blender make a fine powder of it
  • Heat coconut oil in a pan, add cumin seeds, chopped onions, salt to taste and fry till the onions become golden in colour
  • Now add ginger garlic paste, turmeric powder, mix well and add masala powder we prepared at first, mix well
  • Add the chicken pieces, some water and cook this for 20 minutes or cook till the chicken is tender
  • Once it has done, allow it to cook on low flame till oil oozes out
  • Turn off the flame and transfer it to a serving bowl, garnish with chopped coriander and serve it with steamed rice
