Shikampuri Kebab Recipe

Ingredients for Shikampuri Kebab Recipe

  • Mutton mince – 500 gm
  • Channa daal – 1/4 cup
  • Oil for shallow fry
  • Green cardamoms – 6
  • Cloves – 4
  • Allspice – 1/2 Tsp
  • Cinnamon stick – 2
  • Black cumin seeds – 1/2 tsp
  • Ginger garlic paste – 1 tbsp
  • Onion – 100 gm
  • Chilli powder – 1 tbsp
  • Turmeric powder – 1/2 tsp
  • Fresh coriander leaves – 2 Tbsp (finely chopped)
  • Fresh mint – 2 Tbsp
  • Green chillies – 2
  • Thick curd – 250 gm
  • Onions – 200 gm
  • Green chillies – 2
  • Fresh coriander – 2 Tbsp
  • Black pepper – 1 tsp
  • Salt to taste
  • Water as required

Method

  • Heat 2 tbsp of oil in a pan, add green cardamom, cloves, allspice powder, cinnamon stick, channa dal and ginger garlic paste, stir-fry over medium flame
  • Add onions, salt, red chillies, turmeric, coriander, mint, green chillies and stir well
  • Now add the meat and fry for 5 mins
  • Add required amount of water and bring to a boil till the dal is cooked and the water is completely absorbed.
  • When the meat is cooked, remove it from flame and allow to cool
  • Then transfer it to a blender and mince well
  • For the filling, take curd, add onions, deseeded green chillies, chopped coriander and mint in a mixing bowl
  • Add black pepper and mix well
  • Divide the minced meat into small portions and flatten each mince ball, place a portion of the filling in the middle and cover to make 3/4 inch patties
  • Heat a little oil in a pan and shallow fry the prepared kebabs for 3-4 minutes, till they turn a brown color
  • Serve it on a serving plate
  • Serve hot with green chutney or any of your likes
