Moroccan Chicken Kebabs Recipe

Ingredients for Moroccan Chicken Kebabs Recipe

Chicken breasts – 1 1/4 pounds (cubed)

For Marinating

  • Virgin olive oil – 2 Tbsp
  • White wine vinegar – 2 Tbsp
  • Onion – 2 Tbsp (finely chopped)
  • Mint leaves – 1 Tbsp (finely chopped)
  • Garlic – 4 cloves (minced)
  • Ginger – 1/4 Tsp (grounded)
  • Coriander leaves – 1 Tbsp (finely chopped)
  • Parsley – 1 Tbsp (finely chopped)
  • Cumin powder – 1 Tsp
  • Coriander powder – 1 Tsp
  • Cayenne pepper – 1/4 Tsp
  • Ground cinnamon – 1/4 Tsp
  • Lemon juice – 2 Tbsp
  • Paprika – 1/2 Tsp
  • Saffron – 1/4 Tsp
  • Honey – 1 Tsp
  • Salt to taste

Method

  • Take a mixing bowl combine all marinade ingredients together and mix well
  • Now add chicken pieces, toss well to coat
  • Cover the bowl and refrigerate it for 4-5 hours
  • Preheat the barbecue grill to medium, meanwhile thread the marinated chicken pieces onto skewers, about 3-4 pieces to each skewer
  • Place the skewers on the grill and cook covered for about 8-10 minutes per side or cook them until the chicken pieces cooked through, turning them over once
  • You can also cook it in a oven. First preheat the oven to 400ºF, line a baking tray with parchment, use a grilling rack if you have one or place chicken directly on the parchment and bake it about 8-10 minutes per side or cook until chicken pieces are cooked through. Place under the broiler for couple of minutes to char lightly
