Ingredients for Indian Style Pasta Recipe

 

  • Pasta – 1 cup
  • Water as required
  • Onions – ¼ cup (finely chopped)
  • Tomatoes- ¼ cup (finely chopped)
  • Ginger-garlic paste – 1 tsp
  • Green chilli – 2 (finely chopped)
  • Chilli powder – 1 Tsp
  • Garam masala powder – ¼ tsp
  • All purpose flour (Maida) – 1 Tsp
  • Milk – 3 tbsp
  • Extra Virgin Olive Oil – 2 tbsp
  • Salt- to taste
  • Coriander leaves – few (finely chopped for garnishing)

 

Method:

  • Heat water in a deep pan add salt and few drops of oil while boiling
  • Add the pasta to this and let it cook for few mins until pasta is cooked al dente (soft but firm).
  • Drain the water and keep pasta aside
  • Heat oil in a pan, add onions and green chilly sauté till onion becomes golden brown
  • Next, add the ginger garlic paste and cook till raw smell disappears
  • Add tomatoes and sauté for few mins
  • Now add the flour and milk sauté them for a min
  • Add chilli powder, salt and garam masala mix well
  • Finally, add the cooked pasta and toss them well
  • Turn off flame when all the pasta is coated with the masala and it is heated thoroughly
  • Serve it in a serving bowl
  • Garnish with coriander leaves and serve hot

 

Note:

  • Each shape of pasta cooks differently
  • Check the pasta packet for cooking instructions
  • Be very careful while cooking, do not to overcook
  • You can reserve 1/2 cup of the pasta cooking water just in case to thin the sauce
  • Adding maida gives a thickness to the sauce and helps it coat the pasta nicely.
  • Instead of using milk you can also use drained cooking water
