Ingredients for Darbari kabob Recipe

  • Green Moong Dal – 400 gm (soaked)
  • Cumin seeds – 1 Tsp
  • Ginger-garlic paste – 1 Tsp
  • Ghee – 2 Tbsp
  • Curd – 1 cup
  • Water – 1 cup
  • Garam masala powder – 1/2 Tsp
  • Chilli powder as required
  • Salt to taste

Method

  • First drain the previously soaked green moong dal and keep it aside
  • Heat ghee in a wok on low flame and once the ghee is sufficiently hot, add the cumin seeds as they start to splutter, add dal along with salt and saute well over medium flame till tender
  • It will take about 5-7 minutes
  • Once done, turn off the flame and allow it to cool
  • Transfer it in to a blender and blend the sautéed lentils to fine consistency without adding water, grind it till a dough like consistency forms
  • Now mix some salt to taste and also add chilli powder, garam masala powder, ginger-garlic paste and curd into the ground dal and mix well till it become a soft pliable dough
  • Make small portions of the dough and shape them into round balls, and then flatten them
  • Meanwhile heat enough oil in a heavy-bottomed frying pan on medium flame
  • Fry the flattened dal kebabs in the hot oil over low flame, turning in between till it become crisp and brown color
  • Finally Darbari kebab is ready to be served, garnish it with some coriander leaves and serve hot with chutney of your choice
