Cashew Chicken Salad Recipe

Ingredients for Cashew Chicken Salad

  • Chicken – 1 cup
  • Spring onions – 2 Tbsp
  • Arugula leaves – 2 handful
  • Red chilli flakes – 1/2 Tsp
  • Sunflower oil – 2 Tsp
  • Lime juice – 3 Tbsp
  • Cashews – 4 Tbsp
  • Mango – 1/3 cup
  • Lettuce loose-leaf – 4
  • Soy sauce – 2 Tsp
  • Sesame oil – 3 Tsp
  • Rice vinegar – 2 Tbsp
  • Black pepper as required
  • Salt to taste

Method

  • Take a mixing bowl and add rice vinegar, lime juice, sesame oil, sunflower oil, soy sauce and red chilli flakes, mix well all these ingredients properly
  • Then add mangoes, arugula, lettuce leaves and spring onions, toss them until they are evenly mixed
  • Sprinkle salt and pepper powder to taste and again toss all the ingredients
  • Transfer this to a serving bowl and top up with chicken
  • Garnish the salad with cashews
  • For best taste you can also keep it in the refrigerator before serving it to your guests because it tastes the best when cold
