Ingredients for Andhra Style Chicken Curry Recipe

  • Refined oil – 4 Tbsp
  • Bay leaf – 1
  • Green cardamom – 3
  • Cloves – 3
  • Cinnamon stick – 1 small
  • Onion – 1 (finely chopped)
  • Ginger garlic paste – 2 Tbsp
  • Chicken – ½ kg (cut into bite-size pieces)
  • Turmeric powder – 1 Tsp
  • Salt to taste
  • Water as required
  • Green chillies – 2 (slit)
  • Curry leaves – hand full
  • Chilli powder – 2 tbsp
  • Coriander powder -2 Tbsp
  • Chicken masala as required
  • Kasoori methi – 2 Tsp
  • Garam masala – 1 tsp
  • Coriander leaves – few (finely chopped for garnishing)
  • Cashew nuts – 15
  • Poppy seeds – 1 tbsp
  • Milk – 1 cup (small cup)

Method

  • First Soak the cashews and poppy seed in a cup of milk for an hour and grind it into a smooth paste, keep it aside
  • Heat oil in a pan on medium flame and add bay leaf, green cardamom, cloves, cinnamon fry till it releases the aroma
  • Now add onions, saute till it becomes golden brown and then adds the ginger-garlic paste
  • Add the green chilli and curry leaves, mix well and add the chicken pieces, sauté well for 5 mins
  • Now add the turmeric powder and salt
  • Toss well and add required amount of water
  • Now add the chilli powder, cashew nut -poppy seed paste, chicken masala, kasoori methi, garam masala and coriander powder. stir well and let the curry simmer until the chicken is well cooked. Add little more water if required.
  • Garnish the chicken with chopped coriander leaves and serve it with steamed rice
