Ingredients for Andhra chicken fry

 

  • Oil – 2 tbsp
  • Curry leaves – 2 springs
  • Onion – 2 (finely chopped)
  • Green chilli – 3-4 (finely chopped)
  • Pepper to taste
  • Coriander leaves – 3 Tbsp (finely chopped)
  • Water as required

 

For marinating:

  • Chicken – ½ kg
  • Lemon juice – 2 tbsp
  • Turmeric – 2 pinch
  • Chilli powder to taste
  • Salt to taste
  • Ginger garlic paste – 2 tbsp

 

For garam masala powder:

  • Coriander – 2 tbsp
  • Cinnamon stick – 2 inch
  • Cloves – 8
  • Cardamom – 4
  • Jeera – ½ tbsp
  • Fennel seeds – ¼ tbsp

 

Method:

  • Marinate chicken pieces with ingredients that mentioned under marinating process along with 2tbsp water and garam masala powder keep it aside for 20 mins
  • Heat oil in a pan, add green chillies, and curry leaves and onions and sauté till it become light golden
  • Add marinated chicken and sear on a high flame for few minutes
  • Add salt to taste and mix well
  • Add ½ cup of water, cover with lid and cook till the chicken is fully done
  • Add coriander leaves, mix well and serve hot with rice or chapati
