Ingredients for aloo kulcha recipe

Ingredients for preparing dough

  • Maida/all-purpose flour/refined flour/plain flour – 2 cups
  • Sugar – 1 Tsp
  • Baking powder – 1 Tsp
  • Baking soda – ¼ Tsp
  • Salt to taste
  • Fresh thick curd- ¼ cup
  • Oil – 2 Tsp
  • luke water as required, to knead

Ingredients for potato stuffing

  • Potato – 2 large (boiled and peeled)
  • Green chilli – 1 finely chopped
  • kashmiri red chilli powder – ½ Tsp
  • Garam masala powder – ¼ Tsp
  • Ginger – 1 inch (grated)
  • Dry mango powder – ¼ Tsp
  • Carrom seeds – ¼ Tsp
  • Coriander leaves – 2 tbsp (finely chopped)
  • Salt to taste

Other ingredients

  • 2 tsp black sesame seeds / til
  • 3 tbsp coriander leaves, finely chopped
  • 2 tbsp butter

Method

  • First, knead the dough for 10-15 minutes with ingredients listed for dough.
  • Cover it with a moist cloth and rest it for 2 hours in warm place.
  • Now take a bowl prepare stuffing mixing the ingredients listed for stuffing.
  • After 2 hours, take a small portion of dough and roll it into a circular disk, place aloo stuffing in the centre of dough and take the edge start pleating bringing to centre.
  • Now sprinkle some sesame seeds and coriander leaves, gently roll the dough to oval shape using a rolling pin.
  • brush with water over kulcha.
  • Slowly flip over and put kulcha on hot tawa and press gently, flip the tawa upside down and cook kulcha directly on flame till they turn golden brown
  • Serve it on a serving plate
  • Aloo kulcha is ready to be served, spread some butter on kulcha and serve hot
